Saffron bunt cake recipe


I have made this cake over and over the last ten years and everyone loves it. The people that have it the first time at my house automatically become a fan of it. I always encourage all my friends and family to give a try. It is something new and fresh and the whole house will be filled with the sweet aroma of saffron. You won't be able to wait until it bakes to taste it. It is fairly easy to make, the ingredients are all natural and good for you. And I promise it comes out so much better than any box cake that is filled with food coloring and ingredients we can't even pronounce let alone know what they are. Don't be intimidated and give it a try and let me know how you like it. The only thing new in this recipe is saffron and method of making it but you will love it and learn how to add saffron to other foods as well. The time it will take is 10-15 minutes prep for ingredients and 30 minutes bake time. Good luck.




Ingredients
1 cup milk
1 cup vegetable oil
2 eggs
1 tsp of rose water
2 tsp baking powder
1/2 tsp vanilla
1/2 tsp lemon juice
pinch of finely graded cardamom powder
1 1/2 cups sugar
3 cups flour
1 TBSP saffron liquid

Mix wet ingredients in a bowl using a fork or if you own a hand mixer with a mixer. Add the flour slowly one cup at a time until mixed well. The liquid should be thick. If you have not worked with saffron it is fairly easy. It is one of the most expensive spices in the world. It is known for its aromatic scent that it gives food and one highly exotic yellow tint that gives cake the natural color that it needs to look mouth watering and delicious.

If you have saffron, the first thing you need to do is take the threads of saffron and put it in a mortar and pestle and crush them slowly until it turns into a powder. If you find that it is hard to do you can add a very small pinch of sugar to it, that will help it crush into a finer powder. once it is crushed and in powder form take a small pinch and add to an empty cup. Add about 1 Tablespoon of boiled water on the powder and stir it around. Wait a few minutes and the powder should be a dark orange color. After a few minutes when the saffron water is not hot but just warm add it to your ingredients and mix a couple of times with a fork or with a hand mixer enough that the color spreads and mixes all over your ingredients.

Transfer the ingredient to a bunt cake mold or a 13x9 inch pan if you like. Preheat Oven to 325 degrees and both bunt pan or 13x9 will bake for 30 minutes in the oven. For bunt cake mold it comes out easier if you rub it all over with oil using a napkin and then spreading flour all around the it. when you pour in the cake batter do it evenly around the pan. And tap down the pan a few times to release the air bubbles. check on the cake after 30 minutes if a toothpick inserted in the center comes out clean it is done. If not bake for another 5 minutes while keeping a close eye on it. Let it sit on at room temperature for 10 minutes and serve.
